1. Chocolate muffins recipe without butter and milk
These light treats are perfect for breakfast. Who knows if someone will take them to bed with coffee to start the day full of energy and pampering? We found the recipe on the Wannabemum website and we liked it because it is easy, fast and can also be prepared with children, who will have fun mixing and licking the bowl.

Ingredients
- 240 g of flour 00 + to taste for flour the baking cups
- 170 g of granulated sugar
- 3 medium eggs
- 100 ml of seed oil + to taste for greasing the baking cups
- 200 ml of oat milk or other vegetable milk
- 50 g of bitter cocoa
- 70 g of dark chocolate
- a sachet of vanilla sugar (or cinnamon, orange or lemon zest or other flavorings to taste)
- half a sachet of baking powder
- a pinch of salt
Method
To prepare these soft muffins, start with the chocolate that will be chopped and set aside (it is absolutely recommended to taste a small piece). Whip eggs and sugar with a whisk and then gradually add the oil first and then the vegetable milk. With a sieve, sift the flour and cocoa directly into the dough and continue mixing. A pinch of salt, the yeast (also sifted), a last stir and the dough is ready.
Grease and flour the muffin molds and fill them 2/3 with the dough, bake at 180 degrees for 20 minutes and the muffins are ready to taste.
2. Zucchini recipe with mint taboulé
Here the first course of our menu: light, spring, colorful and fresh is just perfect for ours recipes dedicated to mum. The recipe can be found in the book Eat Different. Creative recipes for those who eat differently (by Lorenza Dadduzio and Flavia Giordano, Gribaudo) and it is, in fact, a vegan and dairy-free dish, without dried fruit and without shellfish: different from the usual, but no less good.

Ingredients for people 4
- 1 red onion
- 400 g of couscous (preferably wholemeal)
- 100 g raisins
- 300 g cherry tomatoes
- the juice of one lemon
- 4 round courgettes
- 1 bunch of mint
- extra virgin olive oil

Method
Start with the courgettes, which will be the "serving dish": cut the cap, hollow them out and cook them at 200 degrees for about 15 minutes. Meanwhile, cut the red onion into cubes and soak in cold water for about 15 minutes and let the raisins soak in a little warm water. Also prepare the couscous, following the directions on the package and let it cool in a bowl with a drizzle of oil. Now cut the cherry tomatoes and prepare the vinaigrette that will season the taboulé, mixing oil, lemon juice and a pinch of salt.
At the time of assembly, rinse the onion thoroughly under running water and add it to the couscous. Add the cherry tomatoes, raisins, mint and season with the vinaigrette. Stir to mix all the ingredients and leave to rest in the refrigerator for about 30 minutes.
When it is time to bring this dish to the table, stuff the courgettes with taboulé and serve.

3. Chicken, Avocado and Asparagus Salad Recipe
Among recipes is preferably used for Mother's Day, this is perhaps the most particular: there are asparagus, but raw. Method
Cut the chicken into strips and brown it with a pinch of salt on a hot plate. Once ready, transfer it to a large bowl and let it cool.
Wash the asparagus, remove the hardest and most woody part and cut them into slices, which you will add to the chicken. Now take care of the avocado: cut it in half, remove the core, peel it and cut it into chunks. Add the avocado, pistachios and rocket in the bowl. Season with oil, salt, pepper and grated ginger or Tabasco.

- 4-5 potatoes
- 1 raw beetroot (or other vegetables of your choice such as turnips, squash, sweet potatoes, courgettes ...)
- 1 tablespoon of extra virgin olive oil
- whole sea salt

Method
To prepare these chips, simply peel the vegetables, wash them thoroughly under running water and cut them into thin slices.
With a heart-shaped cookie cutter, cut a heart out of each slice and place them in a bowl. Season the hearts with the oil, salt and rosemary, mix well and arrange them on a large pan well spaced.
Bake in the oven for 10-15 minutes at maximum temperature.

Ingredients for 8 cupcakes
- 400 g of cooked beetroot
- 240 g of soft wheat flour
- 400 g of white cane sugar
- 15 g of cocoa powder
- 1 teaspoon of yeast
- whole sea salt
- 240 ml of corn oil + to taste for greasing the baking cups
- 1 vanilla bean
- 250 g of cherry yogurt
Method
Heat the oven to 180 degrees while you are preparing the dough.
For these fluffy cupcakes, just blend the yogurt with oil, sugar, beetroot, the seeds of the vanilla bean and a pinch of salt. Then sift the flour with yeast and cocoa in a bowl and add the liquid mixture. Mix as little as possible to get a homogeneous mixture, otherwise you risk getting gummy cupcakes.
Grease muffin molds and fill them 2/3 full with the mixture. Bake in a preheated oven and cook for 25-30 minutes at 180 degrees.
