100 g of rice flour
1 egg and 1 yolk
90 g of butter
80 g of powdered sugar (or plain white)
vanilla powder or stick
organic lemon zest
(powdered sugar, lemon drops and water for the icing)
Beat the eggs with the sugar, add the butter at room temperature until the mixture is smooth. Add the two well diluted flours, the pinch of vanilla, the lemon zest. A ball will form that you will wrap in cling film and leave to rest in the fridge for half an hour. Take the dough and roll it out to a height of about half a centimeter.
Cut out the biscuits with your favorite shapes, place on baking paper and bake at 175 ° for 5-7 minutes. Let it cool and then decorate with simple icing sugar or icing prepared with 80 g of icing sugar, a couple of drops of lemon and two teaspoons of water.
