Cut the pumpkin into slices and wrap it in aluminum. Cook the bag obtained for about 30 minutes at 180 degrees, until the pumpkin is soft.
Remove the peel and pass the pumpkin pulp through a sieve, or mash it with a potato masher. Also add the ricotta, the flour and the yolk. Knead the mixture until you get a mixture that does not stick to your hands (if necessary you can add other flour to the dough).
Take a small portion of the dough and form some serpentines, then cut into chunks to obtain the gnocchi. Cook the pumpkin gnocchi in plenty of salted water and drain them with a ladle as soon as they come to the surface.

- 200 grams of whole cane sugar

Mix together almond flour, spelled flour, yeast, a pinch of salt and chopped chocolate with a knife. Grate the raw pumpkin and add it to the flour mix. In a separate bowl, beat the eggs with the sugar with an electric whisk. Incorporate the oil and add the two compounds. If the dough is too hard, add a few tablespoons of milk. Fill the muffin tins to ¾ and bake at 180 degrees for about 15-20 minutes.

This fragrant and spicy recipe of the dietician Dr. is perfect if some child has had to stay at home because of a bit of cold or flu: ginger and the vitamins contained in mandarins and pumpkin are, in fact, an ideal team in fighting the first symptoms and something hot is always good when you are sick.

- 600 g of peeled pumpkin
- 6 medium carrots
- 2 Tropea onions
- 1 l of vegetable broth
- 1-2 tablespoons of grated fresh ginger, according to taste
- extra virgin olive oil
- whole sea salt to taste
- 2-3 mandarins or clementines, of which the zest (about 2 teaspoons) and the juice
- coriander and sunflower seeds for garnish (optional)
Clean the vegetables and cut them into pieces. Put them in a saucepan and cook for about 20 minutes over low heat, just covering them with the broth. Blend the vegetables and, if the cream is too thick, add more broth. Season with ginger, oil and salt and cook for another 8-10 minutes. Also add the tangerine juice to the cream just before turning off the heat. Serve garnished with chopped mandarin peel, coriander and sunflower seeds.
4. Pumpkin Cookies

- 115 g soft butter
- 75 g caster sugar
- 75 g brown sugar
- 1 teaspoon of vanilla extract or the seeds of a berry
- 1 pinch salt
- 1 whole egg
- 130 g of cooked pumpkin pulp
- 240 g of flour for cakes
- 1 level teaspoon of baking powder
- XNUMX/XNUMX teaspoon ground cinnamon (optional)
- 100 g of chocolate chips or dark chocolate in small pieces
Using a food processor or simply with a fork, mix the soft butter into small pieces with the granulated and brown sugar, vanilla and salt until the mixture is smooth. Also add the egg and the blended pumpkin until you get a puree and continue mixing.
Once all the ingredients are well blended, also add the chocolate chips, flour and baking powder. Cover and leave to rest in the fridge for at least half an hour.
After this time, take a small portion of the dough and roll it quickly in your hands. Arrange the balls well spaced on a baking sheet covered with parchment paper and bake in the pre-heated oven for 15 minutes at 180 degrees.

Mix the minced meat with the pumpkin puree, obtained by cooking the vegetable in the oven until the pulp is very soft and then mashing it with a fork, a potato masher or blending it. Adjust the salt mixture and add the chopped parsley and grated garlic and mix well.
Make 12 meatballs roughly the same size from the dough and keep them ready. Meanwhile, heat the coconut oil with the sage leaves, brown the meatballs on each side and cook for 10 minutes, turning them from time to time.
