Risotto for gourmet babies (from 7-8 months onwards)
Why not prepare a real baby risotto so similar to that of mom and dad? Well, it is not difficult and above all by adding vegetables, cheese or fish and meat depending on the type of preparation you will have a tasty single dish. Let's see how.
40 g of baby rice
50 g of pumpkin
1 bay leaf
a few slices of fresh spring onion
2 tablespoons of fresh robiola
1/2 teaspoon of Parmesan cheese
1 teaspoon of extra virgin olive oil
Process of pumpkin risotto
Wash the pumpkin thoroughly, rubbing the outer rind (remove it if necessary). Take a pot with the steamer basket, fill it one third with water, add a leaf of then. Place the pumpkin, cover with a lid and put on the fire to cook for about 30 minutes. Take back the pumpkin, get the pulp and set aside the cooking water.
Stew two slices of spring onion with a teaspoon of oil, then add the baby rice and the pumpkin pulp. Add the broth and proceed as in the preparation of a risotto. It will take you about 10 minutes. When cooked, turn off and stir in the fresh robiola and a teaspoon of Parmesan cheese to taste. Serve to the baby.
