Round courgettes stuffed with spelled and feta

Let's see together a very simple summer recipe, which can be prepared together with the children: round courgettes stuffed with spelled with feta. The little ones will have a lot of fun being involved in this recipe.

Ingredients for 1 adult serving

  • 2 round courgettes
  • 60 g of spelled
  • 60 g of feta cheese
  • A handful of rocket
  • Basil
  • Extra virgin olive oil

First boil the courgettes in lightly salted water. The cooking time should be around 15 minutes, but it depends a lot on the size of the zucchini. Touch them from time to time, keeping in mind that they should stay soft but not flake off. After having drained them, remove the top hat and with a teaspoon engrave them along the edge to extract the pulp. At this point, let the children help you empty them well with a spoon.

Meanwhile, boil the spelled, reusing the cooking water of the zucchini.

For the zucchini filling, you can involve even very young children. Cut the feta cheese coarsely and then make it crumble with the hands of the children. They can also break up the rocket.

In a bowl, mix the spelled, the coarsely chopped courgette pulp (possibly drained), the crumbled feta, the hand-chopped rocket and the chopped basil. Season with 1 tablespoon of extra virgin olive oil, mix well and fill the courgettes.

Even in this passage children can actively participate, filling the courgettes with the spelled seasoned.

Cover with the courgette hat kept aside and served cold (you can also leave them in the fridge to rest for a couple of hours).
