Special pizza with pistachios, mortadella and parmesan

Ingredients for 8 people:


  • 1kg of flour
  • 7g of baking powder
  • 500g of warm water
  • 40g of fine salt.


Pour the flour, yeast, fine salt and sprinkle the water into a large bowl. With your fingers, begin to soften the yeast, as you add the water with the palm of your hand, knead. Obtained a homogeneous mixture and without lumps, let your dough rest in the bowl for about thirty minutes. Remember to cover the pasta with a cloth.


After thirty minutes, flour your hands and form the balls of the size you prefer and leave to rest for about 10 hours, cover the dough balls with a dry cloth.


When dinner time has come, roll out your dough with a wooden rolling pin and place it in an aluminum baking pan.


Today I propose to you dressing with:


  • Chopped mozzarella
  • Fresh mortadella
  • Chopped pistachios
  • Grana cheese flakes
  • Optional (stracciatella)


Disc of dough half a millimeter thick, season with slices of mortadella and cover with chopped mozzarella.


As soon as the pizza is taken out of the oven, the cooking times depend on the oven, sprinkle with chopped pistachios and parmesan flakes.
